Sourced from the Les Pavots vineyard in Knights Valley, it offers a Napa-adjacent take on classic Bordeaux elegance, with the depth and polish to age beautifully for decades.

Tasting Notes
In the glass, it shows a deep, inky ruby color with great concentration. The nose is layered and inviting, unfolding with dark cherries, blackberries, blueberry coulis, morels, fresh leather, and a touch of vanilla. The palate is full-bodied and powerful, yet refined, echoing the dark fruit profile while adding notes of dark chocolate and sweet tobacco. It has the structure and balance to benefit from another 2-3 years in bottle, and should drink superbly over the next 30 years.

Production
Les Pavots comes from Peter Michael Winery’s own vineyard in Knights Valley, where the estate carefully farms Bordeaux varietals suited to the site’s warm days, cool nights, and volcanic-influenced soils. The 2019 vintage is a blend of Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, aged for 18 months in 100% French oak barrels and bottled unfiltered to preserve purity and texture.

Food & Serving
This is a wine for richly flavored dishes such as prime rib, ribeye steak, roast lamb, venison, or slow-braised short ribs. It also pairs beautifully with mushroom dishes and aged hard cheeses. Serve at 16-18°C, and decant for at least 1-2 hours to let the wine fully open.
