Peter Michael Les Pavots 2016 is a striking Bordeaux-style red blend from one of California’s most acclaimed estates, crafted from fruit grown on the winery’s own Les Pavots vineyard in Knights Valley. Often compared to a velvet-textured Margaux, it brings together depth, elegance, and the kind of precision that has made Peter Michael a benchmark for world-class mountain-grown Cabernet blends.
Tasting Notes
In the glass, it shows a deep, насыщенная ruby-purple color that signals concentration and richness. The bouquet is layered and expressive, with dark cherry, blackberry, blueberry coulis, morels, fresh leather, and a touch of vanilla unfolding with air.
The palate is full-bodied and powerful, yet refined, with plenty of structure and a seamless, velvety texture. Flavors mirror the nose while adding dark chocolate and sweet tobacco, giving the wine both generosity and complexity. Nicolas Morlet suggests a few more years of bottle age will benefit it further, but it already has the balance and depth to evolve beautifully over the next 20 to 30 years.
Production
Les Pavots is sourced entirely from Peter Michael Winery’s own vineyard in Knights Valley, where the warm California climate and volcanic soils help produce Cabernet-based wines with both ripeness and structure. For the 2016 vintage, Nicolas Morlet assembled a blend of 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot, and 7% Petit Verdot. The wine was aged for 18 months in 100% French oak barrels and bottled unfiltered, preserving its purity and intensity.
Food & Serving
This is a wine that calls for richly flavored dishes such as prime rib, grilled lamb, beef tenderloin, venison, or truffle-infused mushroom dishes. It also works well with aged hard cheeses and slow-braised meats. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking now to help the aromatics open and the tannins soften.
