Tasting Notes
In the glass, Cuvée Litote shows a bright, pale straw color with fine, persistent bubbles forming an elegant mousse. On the nose, it opens with citrus zest and crisp green apple, layered with white flowers, pear skin and hints of freshly baked brioche and chalky minerality.
The palate is precise and vibrant, reflecting its Extra Brut character with a taut, mouthwatering acidity and very low sweetness. The fruit—Chardonnay and Pinot Meunier—is harvested by hand to ensure careful selection of healthy, perfectly ripe grapes. In the cellar, the base wines are vinified separately to respect the character of each variety and parcel, then blended to achieve balance and complexity. The wine undergoes secondary fermentation in bottle, followed by extended aging on the lees to build texture and nuance before disgorgement. Finished as an Extra Brut, with very low dosage, it allows the natural profile of the fruit and terroir to shine through with clarity.
