Description

Paraschos JBZ Pinot Grigio Riserva 2022 is a characterful white from the famed Collio hills, crafted to showcase depth rather than the usual easy-drinking profile of Pinot Grigio. Sourced exclusively from the Giasbana (Jazbine) vineyard in San Floriano del Collio, it marries ripe fruit, texture and mineral tension in a distinctly Friulian style. This Riserva bottling highlights the region’s tradition of serious, ageworthy whites made from local and international varieties alike.

Tasting Notes
In the glass, the JBZ Pinot Grigio Riserva 2022 typically shows a deep straw to pale copper hue, a hallmark of fully ripe Pinot Grigio from Collio’s hillsides. The nose opens with ripe pear, yellow apple and white peach, layered with hints of citrus zest, acacia blossom and subtle wild herbs, underpinned by a chalky, stony edge. On the palate, expect a wine that is more structured and textural than many Pinot Grigios, with medium to full body, vibrant acidity and a fine, saline backbone. Flavors of orchard and stone fruits are joined by notes of almond, gentle spice and a savory minerality that reflects its ponka-rich soils. The Riserva style suggests extended élevage, giving the wine additional polish and length, as well as the potential to evolve gracefully in bottle over 5–7 years, gaining complexity and a more honeyed, nutty profile with time.

Production
The Giasbana (Jazbine) vineyard in San Floriano del Collio faces southeast, benefiting from morning and midday sun that promotes even ripening while preserving freshness. Vines grow on a mix of clay and classic Friulian ponka – stratified marl and sandstone – which naturally limits vigor and imparts marked minerality and structure to the fruit. Grapes are typically picked by hand to ensure careful selection of bunches, especially important for a Riserva expression. In the cellar, fermentation is likely carried out with a gentle approach to extraction, possibly with some skin contact to build texture, followed by maturation on fine lees in inert tanks or large neutral vessels. This patient élevage allows the wine to integrate, develop complexity and achieve the depth expected from a Collio Riserva.

Food & Serving
This Pinot Grigio Riserva is a versatile partner for refined dishes such as grilled or baked sea bass, scallops, prawn risotto, or rich seafood pastas, as well as roast chicken, veal in light sauces, and mushroom-based dishes like risotto ai funghi. It also pairs beautifully with Friulian specialties, creamy soft cheeses and charcuterie. Serve at 10–12 °C to balance freshness and aromatic expression; if possible, pour it into a medium-sized white wine glass. A brief decant of 20–30 minutes can help the wine open up and reveal its full spectrum of fruit, floral and mineral notes.

Producer
Paraschos is a small, quality-driven estate in Friuli-Venezia Giulia, working in the borderlands where Italian and Central European wine cultures meet. Known for its artisanal approach and focus on terroir-expressive wines, the winery has contributed to the region’s reputation for serious, ageworthy whites that go far beyond standard commercial styles. By emphasizing careful vineyard work, low yields and thoughtful, often minimal-intervention winemaking, Paraschos has become a respected name among wine lovers seeking authentic Collio expressions, particularly from varieties like Pinot Grigio, Ribolla Gialla and other local grapes.
