Paolo Conterno Piemonte Chardonnay Divers 2021 is a refined Italian white that brings a distinctly Piemontese touch to the world’s most famous white grape. Crafted in the rolling hills of Piedmont, it combines clarity, freshness and subtle complexity, making it an excellent alternative to more opulent, oak-heavy Chardonnays. Tasting Notes
In the glass, this Chardonnay shows a bright straw-yellow color with glints of green, hinting at its freshness and youthful energy. The nose is inviting yet precise, offering aromas of ripe green apple, pear and white peach, layered with notes of lemon zest, acacia blossom and a delicate mineral edge.
On the palate, it is medium-bodied and finely textured, with a lively acidity that keeps the fruit vivid and refreshing. Flavors of orchard fruit, citrus and subtle stone fruit are joined by hints of almond and a saline, stony nuance that lingers on the finish. The wine is crafted to be enjoyed in its youth for its vibrancy and purity, but it has the structure to develop additional complexity over the next 3–5 years, gaining more nutty and honeyed notes with short-term cellaring.
Production
The Chardonnay for Divers is sourced from hillside vineyards in Piemonte, where cooler nights and well-drained, calcareous and clay-limestone soils help preserve aromatics and acidity. Grapes are typically harvested by hand at optimal ripeness to ensure careful selection of bunches and protection of the fruit’s delicate aromas. In the cellar, a gentle pressing and temperature-controlled fermentation in stainless steel (and possibly a small portion in neutral wood) allow the varietal character and minerality to take center stage, with lees contact adding subtle texture and complexity without overpowering oak influence.
Food & Serving
This Piemonte Chardonnay is a versatile partner at the table, pairing beautifully with grilled or baked white fish, shellfish, sushi, risotto with spring vegetables, roast chicken, and creamy soft cheeses like robiola or young goat’s cheese. Serve chilled at around 8–10 °C (46–50 °F) to highlight its freshness and aromatics. Decanting is generally not necessary, but pouring the wine into the glass a few minutes before serving helps it open up and reveal its full aromatic profile.
