Palmento Costanzo Etna Rosso Contrada Santo Spirito is a compelling organic red from one of Sicily’s most distinctive volcanic appellations. Made mainly from Nerello Mascalese with a touch of Nerello Cappuccio, it captures the elegance, intensity, and mineral energy that have made Etna wines so admired in recent years.

Tasting Notes
In the glass, it shows a vivid ruby-red colour with garnet reflections, hinting at both freshness and depth. The nose is broad and layered, offering sour cherry, black cherry, and tomato leaf, lifted by black pepper and a sweet tobacco nuance. On the palate, the wine is velvety and well balanced, with soft tannins, fine oak tones, and a sense of quiet power beneath its polished texture. The volcanic character gives it length and definition, while its structure suggests excellent aging potential over the coming years.

Production
This wine comes from Contrada Santo Spirito on Mount Etna, where the vines are planted at around 720 metres above sea level on volcanic soils that lend tension, minerality, and freshness. The grapes are organically farmed and carefully harvested to preserve purity and site expression. Fermentation takes place in conical oak vats with native yeasts, followed by full malolactic fermentation and maturation for 24 months in French oak (Ovum), then 18 months in bottle.

Food & Serving
This Etna Rosso pairs beautifully with roasted lamb, game birds, mushroom risotto, grilled tuna, and aged hard cheeses. Serve at 16–18°C; decanting for about an hour is recommended to open up the wine’s aromatic complexity and soften its structure.
