The region’s warm days and cooler nights, along with well‑drained, alluvial and gravelly soils, help retain both richness and freshness in the fruit. Grapes are left on the vine for a brief period of natural overripening, intensifying aromatics and enhancing body. After careful harvesting at optimal maturity, the grapes are gently crushed and fermented at controlled temperatures to preserve fruit purity, with regular pump‑overs to extract colour and soft tannins. The wine may see a period of maturation in stainless steel and/or oak, allowing the fruit to remain front and centre while gaining extra roundness and harmony before bottling.
