Tasting Notes
In the glass, this rosé shows a delicate pale pink hue with attractive copper and light salmon tones, lifted by a fine, persistent mousse. The nose is subtle yet expressive, with notes of freshly cut strawberries, red currants and red cherries, layered over hints of berry confit and a twist of lime zest.
On the palate, it is light on its feet yet generous in flavour, delivering juicy red berry fruit—think raspberry, strawberry and red cherry—wrapped in a bright, mineral, lemon-zest driven texture. There is a gentle, food-friendly grip of fine phenolics on the finish that adds structure without heaviness, and a clean, focused, concentrated aftertaste with a touch of raspberry lingering on the palate. Enjoyed for its approachable, uncomplicated drinking pleasure, this non-vintage cuvée is best consumed within a few years of release to capture its fresh, vibrant fruit, but will hold and develop a little extra complexity over 2–3 years in bottle.
Production
Oxney Organic Estate sits in the cool, maritime-influenced climate of Sussex, where chalk, sand and clay-rich soils give naturally high acidity and a subtle mineral line that suits sparkling wine beautifully. The vineyards are farmed organically, with careful canopy management, low chemical input and an emphasis on biodiversity to ensure healthy, balanced fruit. Grapes—Chardonnay, Seyval Blanc, Pinot Noir (Spätburgunder) and Pinot Meunier (Schwarzriesling)—are harvested by hand at optimal ripeness for sparkling wine, preserving freshness and delicacy. In the cellar, the base wines are gently pressed, fermented at controlled temperatures and blended with precision before undergoing secondary fermentation in bottle using the traditional method, followed by extended lees aging to build texture and fine mousse, and a carefully judged dosage to retain a crisp, dry style.
Food & Serving
This English organic rosé sparkling is a versatile food companion, ideal with smoked salmon canapés, sushi, shellfish, grilled prawns, or delicate fish dishes. Its red-berry brightness also works beautifully with charcuterie, soft cheeses, summer salads with strawberries or beetroot, and light poultry dishes, as well as fruit tarts or fresh berries for dessert. Serve well chilled at 8–10°C. No decanting is necessary; simply pour into slender flutes or tulip-shaped sparkling wine glasses, allowing the fine mousse and delicate aromas to unfold in the glass.
