Tasting Notes
In the glass, the 2019 Blanc de Blancs shines a pale lemon-gold with a fine, persistent stream of tiny bubbles. The nose is pure and expressive, offering notes of green apple, lemon zest and white flowers, layered with hints of brioche, toasted nuts and chalky minerality from time spent on the lees.
On the palate, it is crisp and focused, with bright citrus and orchard fruit at the core—think Granny Smith apple, pear and a touch of grapefruit—balanced by a creamy, gently toasty mid-palate. The mousse is delicate yet energetic, carrying through a long, mineral-driven finish with a subtle saline edge. Well-structured acidity gives the wine excellent aging potential; while already beautifully harmonious now, it will continue to develop more biscuity, nutty complexity over the next 5–7 years if properly cellared.
Production
Oxney Organic Estate lies in Sussex, where maritime influences and cool English conditions are ideal for producing high-quality sparkling wines with naturally high acidity. The vineyards are farmed organically, with careful attention to soil health and biodiversity; Chardonnay vines are nurtured on well-drained soils that help concentrate flavour while preserving freshness. Grapes are harvested by hand at optimal ripeness to retain brightness and balance, then gently pressed to extract only the finest juice. Fermentation takes place using traditional methods, followed by a secondary fermentation in bottle in the classic sparkling wine style. The wine is then aged on its lees to build texture, depth and those subtle brioche notes that complement the variety’s natural elegance.
Food & Serving
This Blanc de Blancs is a superb match for delicate seafood dishes such as oysters, scallop carpaccio, sushi and sashimi, as well as lightly grilled fish, tempura, or smoked salmon blinis. It also pairs beautifully with soft, creamy cheeses, fresh goat’s cheese, or simple poultry dishes with lemon and herbs. Serve well-chilled at around 8–10°C to highlight its precision and freshness. A brief 10–15 minutes in the glass is enough for the aromas to open; decanting is not necessary, but pouring into proper sparkling wine flutes or tulip-shaped glasses will show the wine at its best.
