Tasting Notes
In the glass, Olivini Grappa Invecchiata shows a luminous, straw-gold to light amber hue, reflecting its time spent in wood. The nose opens with lifted aromas of ripe orchard fruits and citrus peel, wrapped in notes of vanilla, toasted nuts and gentle spice, with a delicate floral and herbal undertone that speaks to its origins in Lake Garda’s white grape varieties.
On the palate, it is full-bodied and structured at 45%, yet surprisingly polished, with a silky texture that carries flavors of dried fruit, honey, almond, and a touch of sweet baking spice from the aging. Fresh, grape-driven notes keep it vibrant, while the finish is long, warm and clean, with a persistent echo of vanilla and dried herbs. Enjoyable now for its balance of aromatic intensity and smoothness, it will also hold its character well for several years if stored properly, gradually integrating its oak and spice notes even further.
Production
Sourced from vineyards in the Lugana and Garda area of Veneto, Olivini Grappa Invecchiata begins with pomace from carefully cultivated vines growing in mineral-rich soils influenced by the moderating breezes of Lake Garda. The grapes for Olivini’s wines are hand-harvested to ensure healthy, high-quality fruit, and the fresh, still-fragrant pomace is quickly transported to the distillery to preserve its aromatic potential. Distillation is carried out with close attention to purity and finesse, selecting only the finest fractions to create a clean, expressive spirit. The grappa is then aged (invecchiata) in wood, allowing it to pick up color, texture and subtle oak-derived notes, while rounding off its edges and adding depth and complexity to the final blend.
Food & Serving
Olivini Grappa Invecchiata is a natural after-dinner spirit, ideal on its own as a refined digestif, or alongside hard aged cheeses, toasted nuts, dark chocolate, or traditional Italian pastries such as cantucci or almond biscotti. Serve it slightly cool, around 14–18°C (57–64°F), to highlight its aromatics without muting its expressiveness. No long decanting is needed, but letting the spirit rest in the glass for a few minutes will allow the more delicate fruit, floral and spice notes to unfold fully.
