From the sleepy Tauber Valley in Franken, the 2019 Silvaner Steillage Alte Reben Bio from Ökologischer Land- & Weinbau KRAEMER is a striking example of how pure, uncompromising natural winemaking can reveal the soul of a grape. Sourced from old-vine, steep-slope parcels, this certified organic Silvaner is all about structure, spice, and minerality rather than overt fruit. It captures the traditional strength of Franken Silvaner while pushing the style in a decidedly progressive, low-intervention direction.

Tasting Notes
In the glass, this wine shows a pale to medium straw color with a natural, slight haze—an immediate cue to its unfiltered, minimally handled character. Swirl it and you’ll notice a fine texture and good viscosity that hint at depth and grip on the palate. The nose opens surprisingly inviting, with ripe yellow orchard fruit—most apple, quince, and a touch of pear—wrapped in bright, stony minerality. With air, more comes to the surface: light earthy and chalky notes, crushed shell, a whisper of graphite, herbal nuances, and subtle leesy tones. On the palate, it is firm and structured rather than plush, with a phenolic backbone that gives bite and tension. The initial impression of ripe fruit quickly shifts to something more linear and serious: salty, chalk-driven minerality, gentle tannic grip from skin contact, and a long, dry, almost tactile finish. As it takes on air, the wine becomes more angular and complex, emphasizing spice, earth, and mineral over fruit. Already expressive now, it has the structure and acidity to age and evolve over the next 5–7 years, gaining further depth and savory complexity.

Production
The Silvaner Alte Reben comes from steep, old-vine parcels rooted in classic Franken Muschelkalk (shell limestone) soils laced with graphite veins—a terroir that imparts tension, salinity, and a distinct mineral-earthy profile. The vineyards are farmed organically with great care, favoring biodiversity and soil health over high yields. Harvesting is done by hand, with strict selection in the vineyard to ensure only perfectly ripe, healthy grapes make it to the cellar. In the winery, Stephan Krämer works in a rigorously low-intervention way: spontaneous fermentation with native yeasts, partly with extended maceration on the skins and partly via intracellular (semi-carbonic) fermentation, to build texture and complexity. There are no additions, no temperature control, no fining, and no filtration. The only intervention is a very small addition of sulfur (15–20 mg/L) just before bottling, resulting in a naturally cloudy, unadorned expression of Silvaner and site.

Food & Serving
This structured, mineral-driven Silvaner is a superb match for nuanced, savory dishes. Think freshwater fish (trout, pike-perch) with herbs, roasted root vegetables, veal or pork schnitzel, fried or smoked trout, and delicate poultry. It also pairs beautifully with soft-ripened cheeses, mild goat cheese, or vegetable-driven cuisine with fennel, celeriac, or cabbage. Serve at 10–12°C to preserve its lift while allowing the texture and spice to unfold. Decanting for 30–60 minutes is highly recommended, both to let any initial reduction blow off and to allow the phenolic structure and mineral layers to open up fully; don’t be afraid of the slight haze, as it’s part of the wine’s authentic character.

Franconia – Bavaria's elite – or something along those lines, is something the author of this text has been heard saying several times already. Silvaner is simply a wonderful grape variety, and the example described here wonderfully shows why.

From the yellow fruits to the taut minerality, it has it all. The slightly natural touch does the rest. Cheers!
