Nicolas Maillart Champagne Grand Cru Pinot Noir Bouzy Jolivettes Extra Brut 2020 is a striking single-vineyard Blanc de Noirs from one of Champagne’s most prized Pinot Noir villages. Sourced exclusively from Grand Cru vineyards in Bouzy, it showcases the power, depth and precision that has made this hillside terroir legendary. With its extra brut dosage, this cuvée offers a pure, terroir-driven expression of Pinot Noir in a particularly characterful vintage.
Tasting Notes
In the glass, this Champagne presents a luminous, pale golden hue with subtle copper highlights, crowned by a fine, persistent mousse. The nose is refined yet generous, opening with red apple and ripe pear, then moving into wild strawberry, blood orange zest, and delicate floral notes, underpinned by hints of brioche, hazelnut, and a chalky minerality.
On the palate, it is precise and energetic, with the structure and depth typical of Bouzy Pinot Noir. Flavors of white peach, redcurrant and citrus peel are layered with toasted almond, light spice, and a saline, stony backbone that drives a long, dry finish. The extra brut style keeps everything taut and focused, highlighting freshness rather than sweetness. Still youthful, this 2020 has the concentration and acidity to evolve beautifully over the next 6–10 years, gaining more complexity and creaminess with time in bottle.
Production
The Jolivettes parcel lies on the sun-exposed slopes of Bouzy, a Grand Cru village on the Montagne de Reims famed for its powerful, yet refined, Pinot Noir. The chalk and limestone-rich soils, with pockets of clay, provide excellent drainage and impart the distinctive mineral tension that runs through the wine. Nicolas Maillart works predominantly with sustainably farmed, high-density plantings, favoring low yields and careful, often hand harvesting to preserve the integrity of the fruit. In the cellar, the grapes are gently pressed and vinified parcel by parcel, with a judicious use of both stainless steel and, in part, oak to build texture without masking the terroir. Extended aging on the lees and a restrained extra brut dosage allow the natural character of Bouzy Pinot Noir to shine through, resulting in a Champagne of both intensity and finesse.

This Grand Cru Blanc de Noirs is extremely versatile at the table, pairing beautifully with rich seafood such as seared scallops, lobster, or tuna tartare, as well as poultry dishes like roast chicken or guinea fowl. It also complements charcuterie, aged hard cheeses, and mushroom-based dishes that echo its savory depth. Serve well chilled, ideally around 8–10°C (46–50°F), to showcase its freshness while allowing the aromatics to open. A brief decant in a wide-bowled glass or simply pouring it into larger white wine glasses can help the wine express its full aromatic range, particularly as it warms slightly in the glass.
