The fruit for Nautilus Estate Marlborough Sauvignon Blanc 2023 is drawn from selected vineyard sites across Marlborough, where cool nights, abundant sunshine, and free-draining alluvial soils on river terraces and valleys produce grapes with intense flavour and crisp natural acidity. Grapes are harvested in the cool of the night and early morning to preserve aromatic purity, then quickly transported to the winery. After gentle pressing, the juice is cool-fermented in stainless steel tanks with carefully chosen yeast strains to accentuate varietal character, while separate parcels are blended to create a balanced final cuvée. The focus throughout is on protecting freshness, clarity, and a precise expression of Marlborough terroir, so the wine is bottled young to capture its vibrant, fruit-driven style.
Food & Serving
This Sauvignon Blanc is a natural match for seafood of all kinds: think freshly shucked oysters, prawns, steamed mussels, or grilled fish with citrus and herbs. It also pairs beautifully with goat’s cheese salads, sushi and sashimi, ceviche, Vietnamese or Thai dishes with fresh coriander and lime, and light vegetable-based starters such as asparagus or pea risotto. Serve well chilled at around 8–10°C. Decanting is not necessary, but pouring into a medium-sized white wine glass and giving it a few minutes in the glass will allow the aromatics to fully open.
