Tasting Notes
In the glass, the 2023 Ca’ del Magro is a bright, luminous straw yellow with subtle greenish highlights that hint at its youthful energy. The nose is enticing and intricate: white peach, pear, and crisp apple are wrapped in notes of jasmine, orange blossom, and wild herbs, with underlying hints of almond, lemon zest, and a faint mineral smokiness. On the palate, it is medium-bodied yet remarkably textural, combining a silky mouthfeel with lively, citrus-driven acidity. Flavors of stone fruit, ripe pear, and golden apple intertwine with nuances of chamomile, fresh fennel, and a gentle saline-mineral undertone. A touch of spice and almond on the long, clean finish adds depth and persistence. While thoroughly enjoyable now for its vibrancy and aromatic lift, this Custoza Superiore has the structure and acidity to evolve beautifully over 4–6 years, developing more honeyed, nutty and tertiary notes with time in bottle.

Production
Ca’ del Magro is sourced from a single, historic vineyard near Lake Garda in the heart of Custoza, where glacial moraine soils of clay, limestone, and gravel lend both freshness and minerality to the fruit. The vines—many of them older, deeply rooted plantings—are predominantly Garganega, complemented by Trebbiano Toscano, Cortese, Friulano/Sauvignon Vert, Chardonnay, Incrocio Manzoni, Malvasia, and Riesling Italico, each variety contributing aromatic nuance and structure. Grapes are harvested by hand at optimal ripeness, with careful selection in the vineyard to preserve pristine fruit. In the cellar, gentle pressing and cool fermentation protect the delicate aromatics, while extended lees contact (often with periodic bâtonnage) adds creaminess, complexity, and length. The result is a finely tuned balance between freshness, texture, and depth, bottled as Custoza Superiore to reflect its elevated quality and origin.

Food & Serving
This is a versatile gastronomic white that shines with refined yet flavorful dishes. Pair it with grilled or baked fish, shellfish, and seafood risotti, or try it alongside sushi, ceviche, and marinated crudo to highlight its mineral tension. It’s equally at home with poultry in light cream or herb sauces, veal scaloppine, fresh goat cheeses, and vegetarian dishes featuring asparagus, zucchini, or mushrooms. Serve at 8–10°C (46–50°F) to capture its aromatics and crispness; as it warms slightly in the glass, more layers emerge. Decanting is not essential, but pouring it into a larger white wine glass and giving it a few minutes to open will reward you with extra depth and complexity.
