Maurice Gentilhomme Chablis 2024 is a beautifully classic expression of northern Burgundy, shaped by the cool precision and mineral drive that define great Chablis. Made from Chardonnay grown on the limestone slopes around the Serein River, it offers purity, freshness, and a distinctly elegant sense of place.

Tasting Notes
In the glass, it shows a clear, luminous pale gold hue. The nose is open and inviting, with notes of white fruit, citrus, and a fine mineral edge that speaks clearly of its Chablis origin. On the palate, the wine is sleek and well balanced, with crisp lemony acidity, subtle texture from time on the lees, and a long, refreshing finish. While already appealing for its freshness, it should also hold well over the next few years, developing a little more depth and complexity with time.

Production
This Chablis comes from the historic Kimmeridgian limestone soils near Auxerre, where fossil-rich earth gives Chardonnay its signature mineral tension and salinity. The grapes are gently pressed in pneumatic presses, then fermented in temperature-controlled stainless steel tanks at 16–20°C to preserve aromatic precision. The wine is then aged for 8–10 months on its lees with regular stirring, adding breadth and complexity while maintaining its natural freshness.

Food & Serving
A natural match for oysters, shellfish, sushi, and delicate white fish, this Chablis also pairs beautifully with veal, poultry, goat’s cheese, Comté, and even mild blue cheeses. Serve chilled at around 8–10°C. Decanting is not necessary, though a brief rest in the glass can help it open up nicely.
