Madame Flöck Mad Dog Raw 2021 is a Mosel Riesling with a wild streak, taking its cues more from Jura’s textured whites than from classic, crystalline Mosel styles. Raised slowly in old barrels on full lees, it manages to be both tactile and electric in the glass. This is a distinctive, terroir-driven white that pushes Riesling into more avant-garde territory while remaining firmly rooted in its steep Terrassenmosel origins.

Tasting Notes
In the glass, Mad Dog Raw 2021 shows a pale lemon color with a slight hazy edge, hinting at its minimal-intervention upbringing. The nose opens with a touch of reduction that quickly lifts to reveal lemon zest, green apple skin, crushed stone, and a faint smoky nuance, along with subtle herbal and saline tones. On the palate, this is razor-sharp yet textural, with a salty, mouthwatering acidity that drives the wine forward. Citrus peel, lime juice, and tart stone fruit meet a gentle creaminess from lees aging, creating tension between brightness and depth. The structure keeps evolving with air, becoming more layered and complex as it warms in the glass. Sourced from steep, terraced vineyards in the Terrassenmosel, Mad Dog Raw 2021 reflects a dramatic slate-dominated terroir that naturally limits yields and concentrates flavor. The grapes are typically hand-harvested on these precipitous slopes to ensure pristine fruit selection. In the cellar, the wine is raised slowly in old barrels on full lees, allowing texture and complexity to build without overt oak influence. A low-intervention approach—likely including spontaneous fermentation and minimal handling—preserves the wine’s raw, salty edge and its vivid expression of site.

Food & Serving
This edgy, saline Riesling is a brilliant match for dishes that thrive on acidity and texture: think oysters, raw or lightly cured fish, ceviche, scallop crudo, or simple grilled white fish with lemon and herbs. It also pairs beautifully with goat cheese, young alpine cheeses, or vegetable-led plates like asparagus, fennel, or lightly pickled vegetables. Serve well-chilled, around 8–10°C (46–50°F).
