Tasting Notes
In the glass, this wine shows a clear, luminous red colour. The nose is fresh and expressive, with strawberry, cherry, and a bouquet of red roses, giving it an elegant, floral edge. The palate is delicate yet focused, with bright red fruit, fine tannins, and a graceful texture that gently wraps around the tongue. Its balance and purity make it immediately appealing, while the structure suggests it will continue to drink well over the next few years.

Production
The Pinot Noir grapes come from old vines in Sancerre and are hand-harvested to preserve quality. Fruit is rigorously sorted both in the vineyard and again at the winery, and all grapes are destemmed before fermentation in large tanks, where the must is pumped over the skins daily for around 30 days. After fermentation, 60% of the wine is aged in oak barrels, while the remainder stays in stainless steel before the final blend is rested for 11 months prior to bottling.

Food & Serving
This is a natural match for light meats such as roast chicken, veal, or duck breast, as well as creamy or dry cheeses. Serve slightly chilled, ideally around 14–16°C, and consider decanting for a short period if you want to open up the wine’s aromatic side.
