With air, more savory nuances emerge: hints of graphite, dried herbs, black tea, spice box and a discreet touch of fine French oak.
On the palate, this Nuits-Saint-Georges is structured yet refined, with a silky attack that quickly gives way to a firm, mineral-backed core. Flavors of juicy cherry, red currant and plum are framed by notes of cocoa, smoked earth, clove and a delicate toastiness from barrel aging. The tannins are fine-grained but assertive, providing the spine typical of the appellation, while the fresh acidity keeps everything lifted and precise. The finish is long and savory, with lingering red fruit, spice and stony minerality. Production
Les Brûlées is a well-exposed Premier Cru site in Nuits-Saint-Georges, rooted in classic Burgundian limestone-clay soils with ample stones that promote excellent drainage and concentration in the fruit. The vines are traditionally managed, often with sustainable or lutte raisonnée practices that emphasize low yields and careful work in the vineyard to preserve the health and balance of the grapes. Harvest is carried out by hand to allow strict bunch selection directly in the vineyard, followed by further sorting at the winery to ensure only perfectly ripe Pinot Noir makes it into the cuvée. Vinification typically begins with a gentle cold maceration to draw out color and aroma, then fermentation in temperature-controlled vats with a mix of punch-downs and pump-overs to extract fine tannins without harshness. Aging takes place in French oak barrels, a proportion of which are new, for around 12–18 months to bring polish and complexity while letting the terroir of Nuits-Saint-Georges Les Brûlées shine through.

This wine’s combination of structure and finesse makes it an excellent partner for refined yet flavorful dishes. Think roasted duck breast with cherry or berry reduction, herb-crusted lamb, game birds, veal with morel mushrooms, or a simple roast chicken with thyme and root vegetables. It also pairs beautifully with mushroom risotto, truffle-based dishes and aged but not overly powerful cheeses like Comté, Tomme or mild washed-rind selections. Serve at 15–17°C (59–63°F) to highlight its aromatic complexity and silky texture. Decanting for 45–60 minutes in its youth is recommended to allow the bouquet to open and the tannins to soften; older bottles should be decanted more gently, if at all, just to remove any sediment.
