Tasting Notes
In the glass, this Pinot Noir shows a bright, luminous red-fruit profile with plenty of lift and clarity. Aromas of blackberry, raspberry, redcurrant, and strawberry are layered with subtle notes of black tea, flint, salmiak-like salinity, and a gentle hint of orange peel. The palate is elegant and airy, with a crisp, almost salty mineral edge that gives the wine definition and length. The fruit feels pure and finely etched rather than heavy, making this a Pinot Noir with both immediacy and complexity. It should age gracefully over the next several years, gaining more nuance and savory depth with time.

Production
The Plow is sourced from the Eola-Amity Hills in the Willamette Valley, a cool-climate area shaped by ancient marine sediments and volcanic influence. That unique terroir helps produce Pinot Noir with vibrant acidity, a saline touch, and a refined, transparent fruit character. The 2021 vintage was fermented with 24% whole clusters and aged for 12 months in French barriques, including 25% new oak, followed by an additional 5 months in tank.

Food & Serving
This wine is best served slightly cool, around 14-16°C, in a large Burgundy glass to allow its aromatics to fully open. It pairs beautifully with roast duck, grilled salmon, mushroom dishes, herb-roasted chicken, or earthy vegetarian plates.
