Lillian Cabernet Sauvignon is a rare cult-release from Maggie Harrison, the acclaimed winemaker behind projects such as Sine Qua Non. Built in a precise, Rhône- and Bordeaux-inspired style, it combines small-production intensity with a finely tuned sense of balance and terroir expression.

Tasting Notes
In the glass, the wine is dark and concentrated, with a vivid aromatic profile of blackcurrant, dark cherry, blackberry, violet, and warm spice, layered with graphite, cedar, and subtle floral nuances. The palate is deep and multi-dimensional, showing powerful yet polished tannins, bright structure, and a long, focused finish where ripe fruit and mineral tension are beautifully aligned. Thanks to its concentration, freshness, and fine-grained structure, this Cabernet Sauvignon has exceptional aging potential. Over the next 15–25 years, it is expected to gain additional complexity, with secondary notes of forest floor, leather, and tobacco gradually integrating with the fruit.

Production
This wine comes from selected parcels in Santa Barbara County, where cool coastal conditions, vineyard elevation, ocean influence, and varied soil types create a more aromatic and structured Cabernet style than the more typical Napa Valley profile. The grapes are harvested for optimal ripeness and fermented spontaneously in small open-top fermenters, followed by extended maturation in French oak barrels for two to three years. It is bottled without fining or filtration to preserve its natural texture and intensity.

Food & Serving
This Cabernet Sauvignon is an excellent match for beef, lamb, venison, grilled entrecôte, braised dishes, and rich mushroom-based preparations. It also pairs well with mature hard cheeses. Serve at 16–18°C and consider decanting for at least 1–2 hours to allow the wine’s aromatic complexity and structure to open fully.
