Tasting Notes
In the glass, the 2019 Les Carmes Haut-Brion shows a deep, vivid garnet-purple hue with brilliant intensity at the core. The nose opens with ripe plum and blackcurrant, then unfurls layers of blood orange zest, warm exotic spices, and hints of new oak—think cedar, cocoa and a discreet vanilla note—woven together with a subtle floral lift. Whole-cluster fermentation adds a gentle herbal and savory nuance, giving the bouquet a complex, perfumed edge.
On the palate, the wine is full-bodied yet wonderfully refined, gliding across the tongue with a plush, velvety mouthfeel. A luminous core of bright, juicy red and black fruits—plum, cassis and redcurrant—sits within an elegant, muscular frame of ripe, powdery tannins. The lively acidity keeps everything fresh and focused, while the finish is long, expansive and layered, echoing citrus peel, spice and graphite. Production
Les Carmes Haut-Brion sits on distinctive gravelly and sandy soils over clay and limestone in the heart of Pessac-Léognan, just outside Bordeaux. The terroir, enriched by deep gravel and cooling influences from nearby waterways, lends both power and aromatic lift to the fruit. In 2019, the blend is dominated by 42% Cabernet Franc and 31% Cabernet Sauvignon, with the balance Merlot, harvested by hand at optimal ripeness to preserve freshness and purity. As is now a hallmark of the estate, a portion of whole clusters was retained during maceration, contributing additional complexity, tension and aromatic intensity. Vinification is meticulous and innovative, with a long, gentle extraction designed to highlight finesse over heaviness. The wine is then aged in a range of vessels—from traditional 225-liter Bordeaux barriques to larger foudres and amphorae—striking a careful balance between oak influence, textural polish and the unadorned expression of fruit and terroir.

This 2019 Les Carmes Haut-Brion is an exceptionally versatile fine Bordeaux at the table, pairing beautifully with refined dishes such as roast lamb with herbs, veal with morel mushrooms, duck breast, or a well-marbled ribeye. It also shines alongside game birds, truffle-inflected cuisine, and aged hard cheeses like Comté or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic detail and tension; avoid serving too warm, which can blur its precision. In its youth, decant for 1.5–2 hours to allow the bouquet to fully blossom and the tannins to soften. As it matures, a gentle 45–60 minute decant will be sufficient to awaken its layers without diminishing delicacy.
