Tasting Notes
In the glass, Castor 2021 is pale straw with green hues, shining and slightly hazy if unfiltered, hinting at its low-intervention origins. The nose is immediately expressive: think fresh lemon zest, green apple, crushed stones and white flowers, layered with subtle notes of almond, biscuit and a delicate saline breeze that’s very Jura. On the palate, the wine is tense and energetic yet remarkably precise. Bright citrus and orchard fruit are wrapped around a core of chalky minerality, with hints of hazelnut, brioche and a gentle savory edge. The texture is fine and almost spherical, with lively acidity giving lift and length to the finish. While delicious now for its purity and vibrancy, this vintage has the structure to evolve gracefully over the next 5–7 years, gaining more nutty, honeyed complexity with time in bottle.

Production
Castor is sourced from carefully tended Chardonnay vines rooted in Jura’s classic marl and limestone soils, which give the wine its distinct mineral backbone and tension. Yields are kept low, with meticulous manual work in the vineyard and hand-harvesting to ensure only perfectly ripe, healthy grapes make it to the cellar. In keeping with Les Bottes Rouges’ minimal-intervention philosophy, fermentation takes place with indigenous yeasts, often in neutral vessels to preserve purity of fruit and terroir. The wine is then aged on fine lees, with gentle handling and little to no fining or filtration, and very modest use of sulphur, resulting in a precise yet soulful expression of Jura Chardonnay.

Food & Serving
Castor 2021 is a superb table wine that shines with refined yet simple dishes. It pairs beautifully with oysters, scallops, grilled white fish, lake fish in beurre blanc, or sushi and sashimi, as well as Jura classics like comté, trout with almonds, or roast chicken with morels and cream. Serve cool but not too cold, ideally around 10–12°C, to let the aromatics fully open. A light decant of 20–30 minutes can help the wine stretch its legs and reveal more of its floral and nutty complexity, especially in its youth.
