Production
Château Léoville Las Cases is located in Saint-Julien, on Bordeaux’s Left Bank, with much of its vineyard lying adjacent to some of Pauillac’s greatest terroirs, including parcels close to Latour. The gravely, well-drained soils over a subsoil of clay and sand are ideally suited to Cabernet Sauvignon, typically supported by Merlot, Cabernet Franc and a small proportion of Petit Verdot. In 1977, grapes would have been harvested by hand, parcel by parcel, with a strict selection both in the vineyard and at the chai. Traditional vinification in temperature-controlled vats, followed by long élevage in French oak barriques (with a significant proportion of new oak), helped shape the wine’s structure and its now-classic notes of cedar, tobacco, and truffle that come with extended bottle age.

Food & Serving
This mature Saint-Julien is best paired with refined, subtly flavored dishes that allow its tertiary complexity to shine. Think roasted lamb with herbs, simply prepared roast beef, veal with morel or truffle sauce, duck breast, or aged hard cheeses such as Comté or mature Gouda. Game birds and mushroom-driven dishes also echo the wine’s earthy, truffle-like notes beautifully. Serve at 16–18°C (about 60–64°F) and handle the bottle gently.
