Tasting Notes
In the glass, Exigence N.10 pours a luminous pale gold with fine, persistent bubbles that form a delicate, creamy mousse. The nose opens with vibrant notes of citrus zest, green apple, and pear, layered with white flowers, chalky minerality, and subtle brioche and hazelnut tones from extended lees aging. Hints of stone fruit and a touch of spice add complexity as the wine evolves in the glass.
On the palate, this Brut is tense yet generous, offering a focused core of lemon, ripe orchard fruit, and white peach, wrapped in a silky, finely textured mousse. Production
Legras & Haas draws primarily on chalk-rich Grand Cru terroirs in the heart of the Champagne region, where the deep, pure chalk subsoils retain moisture, regulate temperature, and impart the distinctive mineral precision that defines this cuvée. Grapes are hand-harvested at optimal ripeness to preserve acidity and purity of fruit, then gently pressed to obtain only the finest juice. The base wines are vinified in stainless steel to highlight clarity and tension, with a careful selection of reserve wines incorporated to build depth and complexity for the Exigence series. Extended aging on the lees in bottle refines the texture, enhances aromatic complexity, and contributes to the fine, persistent mousse before disgorgement and a precise Brut dosage.

This Grand Cru Brut is an elegant partner for refined dishes: think oysters, scallops carpaccio, caviar, and delicate white fish, as well as sushi, sashimi, and tempura. It also pairs beautifully with poultry in light cream sauces, lobster, or simple dishes featuring seasonal vegetables and high-quality cheeses such as Comté or aged Gouda. Serve well chilled at 8–10°C (46–50°F) to showcase its finesse and aromatic detail.
