Le Fay D'Homme Monnières-Saint Fiacre 2018 is a deeply expressive Muscadet from one of the Loire’s most exciting crus. Made from 100% Melon de Bourgogne, it goes far beyond simple, light whites, offering structure, depth and striking mineral character. As a cru communal Muscadet, it showcases the full potential of the Sèvre-et-Maine region for serious, ageworthy white wine.

Tasting Notes
In the glass, this 2018 shows a pale straw color with subtle green reflections, bright and crystalline. The nose is refined and layered: citrus zest, white flowers and fresh pear unfold over a distinct mineral backbone—think wet stones, sea spray and a gentle, salty breeze, with a hint of almond and bread dough from extended lees aging. On the palate, the wine is bone-dry, precise and textural, with a fine, almost chalky grip. Lively acidity carries flavors of lemon, grapefruit pith, green apple and crisp pear, supported by a savory, saline edge and a touch of fennel or anise. The long lees aging adds creaminess and roundness without ever dulling the freshness, leaving a long, mouthwatering, mineral-driven finish. This cru Muscadet is built to age; while already beautifully open, it will continue to develop complexity and subtle nuttiness over 6–10 years from the vintage, depending on storage.

Production
Monnières-Saint Fiacre is one of Muscadet’s prized crus, rooted in poor, well-drained soils of gneiss and other metamorphic rocks that naturally limit yields and intensify concentration. The cool, Atlantic-influenced climate of the western Loire ensures a long, slow ripening of Melon de Bourgogne, preserving vibrant acidity and delicate aromatics. At Le Fay D'Homme, grapes are typically harvested by hand at optimal ripeness to protect fruit integrity, then gently pressed. Fermentation takes place in temperature-controlled tanks or traditional underground vats, usually with indigenous yeasts, to allow the terroir to speak clearly. The hallmark of the cru is extended aging on fine lees—often two years or more—without heavy oak, with occasional bâtonnage, giving the wine its signature texture, complexity and ageworthiness.

Food & Serving
This Monnières-Saint Fiacre is a quintessential partner for seafood: oysters, mussels, grilled prawns, scallops, and simply prepared white fish all shine with its saline, citrus-driven profile. It also pairs beautifully with sushi, sashimi, goat cheese, fresh cheeses, vegetable terrines and lightly creamy poultry or seafood dishes. Serve well-chilled but not ice-cold, ideally around 9–11 °C, to let the aromas fully express. Decanting for 20–30 minutes, especially as the wine gains a few years of bottle age, can help open the nose and soften the edges, revealing extra layers of minerality and subtle lees-derived complexity.
