Tasting Notes
In the glass, the 2021 vintage typically shows a deep ruby hue with youthful brightness. The nose opens with black cherry, plum, and redcurrant notes, layered with hints of violet, cedar, and subtle spice. On the palate, it is refined and medium-bodied, with ripe dark fruit, supple tannins, and a fresh, precise finish that reflects the character of the vintage. While enjoyable in its youth for its fruit and balance, it also has the structure to develop gracefully over the next several years.

Production
Le Dragon de Quintus comes from Saint-Émilion vineyards shaped by Bordeaux’s right-bank terroir, where clay and limestone soils help lend freshness, structure, and minerality to the wine. The fruit is typically harvested by hand and selected parcel by parcel, with vinification aimed at preserving purity and elegance. Fermentation and ageing are carried out with care to maintain the estate’s signature balance of concentration, finesse, and aromatic precision.

Food & Serving
This wine pairs beautifully with roasted lamb, duck breast, beef tenderloin, mushroom dishes, and aged hard cheeses. Serve at around 16–18°C for the best expression of its fruit and structure. Decanting for 30–60 minutes is recommended, especially if opening young, to help the aromas unfold and soften the tannins.
