Tasting Notes
In the glass, Pinotto Rosso typically shows a light to medium ruby hue, often with a slightly translucent edge that hints at its fresh, agile personality. The nose is bright and inviting, with red berries at the forefront—think wild strawberries, red currants, and raspberry—layered with subtle spice, a touch of violet, and a gentle herbal lift. On the palate, it’s juicy and energetic rather than heavy: crunchy red fruit, a hint of black pepper from the Syrah, and a savory, slightly earthy undertone that keeps things interesting. Production
Le Coste farms their vineyards in Lazio with a strong focus on biodiversity and organic or biodynamic principles, taking full advantage of the region’s volcanic soils and high-altitude sites overlooking Lake Bolsena. Grapes for Pinotto Rosso are usually harvested by hand to ensure careful selection and preserve the purity of the fruit, especially important when working with delicate Pinot Nero and more structured Syrah. In the cellar, Le Coste follows a low-intervention philosophy: native yeast fermentations, minimal handling, and little or no additives beyond a cautious dose of sulfur, if any. Maceration times are kept moderate to retain freshness and fragrance, and the wine is typically aged in neutral vessels such as concrete or old oak, allowing the character of the grapes and terroir to shine without heavy wood influence.

Pinotto Rosso’s light, juicy profile makes it a versatile table companion. It pairs beautifully with charcuterie, salumi, and soft to semi-firm cheeses, as well as simple pasta dishes with tomato, grilled vegetables, roast chicken, or lighter pork preparations. It’s also a smart choice for pizza or Mediterranean-style small plates. Serve slightly chilled, around 14–16°C (57–61°F), to highlight its freshness and aromatic lift.
