Tasting Notes
In the glass, the 2018 Chablis Village shows a pale lemon color with green highlights, signaling both youth and vibrancy. The nose opens with precise aromas of lemon zest, green apple and white peach, layered over classic Chablis notes of crushed oyster shell, chalk and a hint of white flowers.
On the palate, it is medium-bodied yet tensile, with a bright, saline spine that keeps the warmer 2018 fruit perfectly in check. Flavors of citrus, orchard fruit and a touch of ripe pear are supported by a mouthwatering mineral line and subtle, savory lees notes. The finish is long, clean and chalky, with a lingering impression of sea breeze and citrus oil. Laurent Tribut’s Chablis vineyards lie on classic Kimmeridgian limestone soils, rich in ancient marine fossils that give Chablis its hallmark saline minerality. The 2018 fruit was harvested by hand, allowing careful selection of healthy, optimally ripe Chardonnay bunches – particularly important in this warm, generous vintage. In the cellar, vinification is deliberately traditional and low-intervention: gentle pressing, fermentation with native yeasts, and aging predominantly in stainless steel with a portion in older oak to enhance texture without adding overt wood character. Extended lees contact helps build depth and complexity while preserving the region’s signature precision and tension.

This Chablis Village is a natural partner for oysters, shellfish, sashimi, and simply prepared white fish, where its saline edge and citrus-driven profile shine. It also pairs beautifully with goat cheese, fresh cheeses, light poultry dishes, and vegetable-based starters such as asparagus, artichokes or fennel. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics and texture to fully express themselves. Decanting is not essential, but a brief 15–20 minutes in a carafe or in the glass can help the wine open up, especially in its younger years.
