Description
Château Latour is one of Bordeaux’s most iconic names, and the 2007 Pauillac offers all the refinement and structure you would expect from a First Growth. Built on a classic blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, this is a wine that reflects both the pedigree of its terroir and the timeless style that has made Latour a benchmark since the 18th century.
Tasting Notes
In the glass, the wine typically shows a deep ruby garnet hue with the beginning signs of maturity. The nose is elegant and layered, with dark cassis, black cherry, cedar, tobacco leaf, graphite, and subtle earthy tones, supported by refined oak spice.
On the palate, it is medium to full-bodied, firm in structure, and precise in its tannins, with a core of dark fruit, savoury notes, and a long, mineral finish. The 2007 vintage is not among the most powerful in Bordeaux, but Latour’s precision and depth give it excellent balance and poise. It can drink beautifully now, though it still has the structure to evolve further over the coming years.
Production
Produced in Pauillac on the Left Bank of Bordeaux, the wine comes from gravelly soils that provide excellent drainage and help Cabernet Sauvignon achieve concentration and elegance. The vineyard benefits from the moderating influence of the Gironde estuary, which supports even ripening in this maritime climate. Grapes are typically harvested parcel by parcel at optimal ripeness, with careful selection both in the vineyard and at the winery. Vinification is carried out with meticulous precision, followed by élevage in French oak to build complexity, texture, and longevity.
Food & Serving
This wine pairs beautifully with classic dishes such as roast lamb, beef tenderloin, duck breast, or game served with rich sauces. It also works well with aged hard cheeses and truffle-accented dishes. Serve at around 16–18°C, and decant for 1–2 hours if drinking now to allow the aromas to खुल properly and soften the structure.
