Subtle spice tones – ginger, anise, and a touch of white pepper – weave through the aromatics, giving the wine a gently warming, almost tea-like complexity while remaining firmly on the dry side. On the palate, this is taut, dry, and focused, with a racy, Chenin-typical acidity that gives the wine both tension and length. Domaine de la Taille aux Loups works with high-quality Loire Chenin Blanc vineyards characterized by poor, well-drained soils – often flint, limestone, and clay over tuffeau – which naturally restrict yields and concentrate flavor. Grapes for “Venise” are harvested by hand in multiple passes to ensure optimal ripeness and pristine fruit, with strict sorting both in the vineyard and at the winery. Fermentation takes place with a gentle, measured approach in barrels, and the wine is aged slowly on its lees to build texture and complexity while preserving purity. Malolactic fermentation is deliberately blocked to retain Chenin’s vivid acidity and precision, resulting in a wine that is bone dry yet layered, with a marked sense of tension and finesse.

This Chenin Blanc is a superb table partner for refined, savory dishes: think butter-poached lobster, scallops with fennel and citrus, turbot or cod in beurre blanc, or roasted chicken with tarragon and morels.
