Tasting Notes
In the glass, this wine shows a translucent ruby to light garnet hue, hinting at its elegant, lighter-bodied profile. Freshly opened, a subtle flinty reduction rises first, giving a gently smoky, almost animal, savory edge that quickly folds into bright red fruit. The nose is packed with aromas of wild strawberries, red currants and raspberries, layered with hibiscus, rosehip, a touch of dried herbs and a delicate spicy undertone. On the palate, the Null Ohm rot Bio 2023 is buoyant and lively, with a juicy, red-berry core and a distinctly refreshing line of acidity. Yields are kept moderate to preserve concentration, and the fruit is typically picked carefully—often by hand—to ensure only healthy, optimally ripe grapes make it to the cellar. Vinification focuses on a gentle extraction to keep tannins fine and supple, with fermentation in stainless steel or neutral vessels, followed by aging in a combination of small and large wooden casks. This approach allows the wine to gain subtle structure and complexity from wood while staying firmly centered on freshness, precision and pure Pinot fruit.
