Moritz Kissinger Spätburgunder Null Ohm rot Bio 2023 is a vibrant, organically crafted Pinot Noir from the rolling hills of Rheinhessen. Made entirely from Spätburgunder and matured in a mix of small and large wooden casks, it delivers a light, juicy and finely structured style that fits almost any occasion. With the switch from Dornfelder and Merlot in earlier editions to pure Pinot Noir from the 2022 vintage onward, this cuvée has gained in finesse and seriousness while remaining wonderfully approachable.

Tasting Notes
In the glass, this wine shows a translucent ruby to light garnet hue, hinting at its elegant, lighter-bodied profile. Freshly opened, a subtle flinty reduction rises first, giving a gently smoky, almost animal, savory edge that quickly folds into bright red fruit. The nose is packed with aromas of wild strawberries, red currants and raspberries, layered with hibiscus, rosehip, a touch of dried herbs and a delicate spicy undertone. On the palate, the Null Ohm rot Bio 2023 is buoyant and lively, with a juicy, red-berry core and a distinctly refreshing line of acidity. Tannins are intentionally restrained and silky, offering just enough grip to give the wine shape without weighing it down. The interplay of crisp acidity, fine-boned texture, subtle floral-spicy notes (hibiscus, rosehip, a hint of pepper) and vivid fruit makes it both easy-drinking and quietly sophisticated. Best enjoyed in its youth for maximum freshness and lift, it should drink beautifully over the next 2–4 years.

Production
Sourced from organically farmed vineyards in Rheinhessen, the Spätburgunder for Null Ohm rot Bio grows on gently rolling slopes with a mix of loess, clay and limestone soils that favor both ripeness and aromatic finesse. Yields are kept moderate to preserve concentration, and the fruit is typically picked carefully—often by hand—to ensure only healthy, optimally ripe grapes make it to the cellar. Vinification focuses on a gentle extraction to keep tannins fine and supple, with fermentation in stainless steel or neutral vessels, followed by aging in a combination of small and large wooden casks. This approach allows the wine to gain subtle structure and complexity from wood while staying firmly centered on freshness, precision and pure Pinot fruit.

Food & Serving
This light, energetic Spätburgunder is a versatile partner at the table. It pairs beautifully with roast chicken, grilled pork chops, charcuterie, and lighter meat dishes such as veal or turkey, as well as with mushroom risotto, baked root vegetables and soft to semi-soft cheeses like Brie, Camembert or young Gouda. For a vegetarian match, try it with roasted beet salad, tomato-based pasta or herb-roasted cauliflower. Serve slightly chilled, at around 14–16°C (57–61°F), to highlight its bright fruit and delicate spice. A brief, 20–30 minute splash in a carafe can help the initial flinty reduction blow off and allow the red berry and floral notes to fully open.
