Description
Moritz Kissinger Sauvignon Blanc Bio 2023 is a vibrant organic white wine from the rolling hills of Rheinhessen, crafted to showcase precision, freshness, and purity of fruit. Made from 100% Sauvignon Blanc, it balances aromatic intensity with a clean, elegant structure, making it as versatile at the table as it is expressive in the glass. This bottling reflects the new generation of German winemakers elevating Rheinhessen whites with a focus on terroir and sustainable viticulture.
Tasting Notes
In the glass, this Sauvignon Blanc shows a pale straw color with greenish highlights, underscoring its youthful freshness. The nose is bright and inviting, with aromas of freshly cut lime, green apple, gooseberry, and subtle passion fruit, layered with hints of fresh herbs, wet stone, and a light floral lift.
On the palate, it is crisp and linear, driven by lively acidity and a medium-light body. Citrus and green fruit notes lead the way—think lime zest, grapefruit, and crunchy pear—supported by delicate herbal tones and a saline, mineral edge that keeps the finish precise and dry. The wine is intended for early drinking to capture its aromatic vibrancy, but it should hold and evolve nicely over the next 2–3 years, gaining a touch more roundness and complexity while retaining its freshness.
Production
Sourced from organically farmed vineyards in Rheinhessen, this Sauvignon Blanc benefits from a mild climate, loess and clay-rich soils, and gentle slopes that help achieve full flavor ripeness while preserving acidity. Grapes are typically harvested by hand at optimal ripeness to maintain aromatic clarity and avoid oxidation. In the cellar, the must is cool-fermented in stainless steel to highlight Sauvignon Blanc’s varietal character, with extended time on fine lees to add texture and subtle complexity without the influence of oak. The result is a clean, terroir-driven expression of Rheinhessen Sauvignon Blanc, made with an emphasis on sustainability and precision.
Food & Serving
This wine pairs beautifully with fresh, aromatic dishes such as goat cheese salads with citrus dressing, sushi and sashimi, grilled white fish, ceviche, or light vegetable dishes with herbs like basil, mint, or coriander. It also works well alongside soft goat cheeses, asparagus, and simple pasta with spring vegetables. Serve well-chilled at around 8–10°C (46–50°F) to emphasize its brightness and aromatics. Decanting is not necessary, but opening the bottle 10–15 minutes before serving allows the aromas to fully unfold.

Weingut Kissinger is a family-run estate in Rheinhessen, part of a dynamic new wave of German producers focused on quality, clarity, and sustainable vineyard practices. With a strong emphasis on organic farming and careful work in the vines, the winery aims to express the character of its local terroir through precise, varietally pure wines.
