Description
Kissinger-Bähr Sauvignon Blanc Bio 2023 Magnum is a finely tuned, biodynamic-style white from Rheinhessen that puts site expression ahead of overt fruit. Crafted in very limited quantities, it combines precision, freshness, and a subtle smoky edge with the character you’d expect from old vines on limestone-rich soils.
Tasting Notes
In the glass, it shows a bright, pale straw color with a lively, youthful sheen. The nose is elegant and restrained, offering mineral notes, a touch of reductive smokiness, and delicate layers of herbs, wild flowers, green apple, and pear.
On the palate, the wine is crisp and focused, with classic Sauvignon Blanc fruit kept in check by a strong mineral backbone. A light grip of tannin adds structure, while the vibrant acidity gives the wine tension and refreshment. It has the balance to age gracefully for a few years, gaining complexity and depth over time.
Production
The grapes come from 26-year-old vines rooted in loess and limestone rock in Rheinhessen, a terroir that brings both generosity and mineral precision. The wine is aged for twelve months in oak cask, followed by six months in stainless steel, then bottled unfiltered to preserve its texture and authenticity. Production is extremely limited, with only 1,058 bottles and 48 magnums made.
Food & Serving
This Sauvignon Blanc pairs beautifully with asparagus, goat cheese, herb-driven salads, grilled fish, shellfish, and lightly spiced vegetable dishes. Serve chilled at around 8–10°C, and decanting is generally not necessary, though a brief period in the glass can help the wine open up and reveal its layered aromatics.
