Description
Karl May Cabernet Sauvignon Réserve Bio 2020 is a powerful, organically certified red that shows just how far German Cabernet has come in the right sites and the right hands. Crafted only in exceptional vintages, this limited Réserve captures ripe, dark fruit and fine barrique spice in a distinctly Rheinhessen expression of a classic Bordeaux grape. The long, warm 2020 season in Osthofen’s southern Wonnegau allowed the fruit to achieve outstanding maturity, giving Karl May the conditions needed to bottle a true flagship Cabernet.
Tasting Notes
In the glass, the wine is deep, almost opaque ruby with violet highlights at the rim. The nose is intense and layered, opening with blackberry, blackcurrant and elderberry, then shifting toward smoky, savory nuances of tobacco leaf, cracked black pepper, graphite and a touch of cedar and dark chocolate from the French oak.
On the palate, this Réserve is full-bodied and concentrated, yet finely balanced by fresh acidity typical of the Rheinhessen climate. Ripe black fruits—blackberry, cassis and mulberry—are wrapped in firm, polished tannins and complemented by notes of roasted coffee, tobacco, dried herbs and subtle vanilla and toast. The finish is long, dry and spicy, suggesting excellent aging potential. Enjoyable now with a proper decant, it should evolve beautifully over 8–12 years, gaining more complexity, tertiary notes and a silkier texture.
Production
The fruit for this wine comes from carefully chosen parcels around Osthofen in the southern Wonnegau, an area whose warm, dry microclimate and well-drained soils make it particularly suited to late-ripening varieties like Cabernet Sauvignon. The grapes are harvested by hand and then re-sorted manually at the winery, ensuring that only perfectly healthy, fully ripe clusters are used. Traditional maceration on the skins allows for gentle yet thorough extraction of color, aroma and tannin, after which the wine is aged in French barriques in classic Réserve style. This combination of low yields, meticulous handwork, certified organic viticulture and extended barrel aging results in a structured, characterful Cabernet with clear varietal expression and a strong sense of place.

This Cabernet Sauvignon Réserve Bio 2020 is a natural partner for robust, savory dishes: think grilled ribeye or entrecôte, roast lamb with herbs, braised beef cheeks, venison or other game, and hearty stews. It also pairs beautifully with aged hard cheeses such as Comté, Manchego or mature Gouda, and with richly seasoned vegetable dishes featuring mushrooms or lentils. For optimal enjoyment, serve at 16–18°C (60–64°F). Decant for 1–2 hours before serving to allow the tannins to soften and the smoky, spicy aromatics to fully unfurl.
