Tasting Notes
In the glass, Joseph Pascal Volnay 2021 shows a bright, translucent ruby hue with garnet reflections at the rim, typical of finely crafted Pinot Noir from this village. The nose is delicate yet persistent, offering red cherries, wild strawberries and raspberries, layered with rose petal, violets, a hint of blood orange zest and gentle notes of spice and underbrush. On the palate, the wine is medium-bodied and wonderfully supple, with silky tannins and a precise, linear acidity that carries the fruit effortlessly across the tongue. Flavors of crunchy red berries, cranberry and pomegranate are framed by subtle oak nuances—think light toast, a touch of vanilla and a whisper of clove—without ever overpowering the purity of the fruit. Sourced from carefully selected parcels around the village of Volnay in the Côte de Beaune, this wine reflects the classic Burgundian mix of limestone-rich marl and well-drained clay soils that favor finesse over sheer power. The grapes are typically hand-harvested at optimal ripeness to preserve delicate aromatics and ensure careful sorting in the vineyard and at the winery. Fermentation takes place in temperature-controlled vats, often with a portion of whole clusters to add aromatic lift and fine-grained tannin, followed by gentle pressing. The wine is then aged in French oak barrels—primarily used and lightly toasted—over several months to add texture and subtle complexity, while maintaining the transparency and elegance that define Volnay.

Joseph Pascal Volnay 2021 is an excellent partner for refined, subtly flavored dishes. It pairs beautifully with roast chicken, duck breast with cherries, herb-crusted lamb, veal, or pork tenderloin, as well as mushroom risotto, truffle-infused dishes and aged hard cheeses like Comté or Tomme.
