Johannes Zillinger REVOLUTION Pink Solera is a boundary-pushing Austrian rosé that blends natural-wine character with serious craftsmanship. Made from Roesler, St. Laurent, and Syrah, it’s fermented in amphora and aged in a dynamic Solera system, creating a layered, ever-evolving cuvée. This non-vintage, organically produced rosé redefines what pink wine can be—vibrant, textural, and distinctly individual.

Tasting Notes
In the glass, REVOLUTION Pink Solera typically shows a deep, cloudy pink to light ruby hue, signaling its minimal-intervention, unfiltered style. The nose is expressive and wild in the best way: ripe red berries, sour cherry, and pomegranate mingle with notes of blood orange, rosehip, and subtle herbal and earthy undertones. On the palate, this is no simple patio rosé—it’s structured, dry, and energetic. Juicy red fruits meet a refreshing, slightly tangy acidity and a gentle grip from skin contact, giving it a serious, food-friendly backbone. You may find flavors of cranberry, red currant, citrus zest, and a hint of spice, with a savory, almost saline edge on the finish. Thanks to the Solera system, there’s a sense of depth and complexity unusual for rosé, and while it’s made to be enjoyed young and vibrant, the wine can comfortably develop for a couple of years, gaining even more harmony and nuance.

Production
Sourced from organically farmed vineyards in Austria’s Weinviertel region, the grapes grow in a cool climate with limestone and loess-rich soils that preserve freshness and aromatic intensity. Harvest is carried out by hand to ensure only healthy, ripe bunches of Roesler, St. Laurent, and Syrah make it into the cellar. The must is fermented in amphora, which allows for gentle micro-oxygenation and a pure, unmasked expression of fruit and terroir. After fermentation, different vintages are blended through the Solera method—where older wine is continually blended with younger—to build complexity, consistency of style, and a unique, multi-layered profile. Minimal intervention, low or no fining and filtration, and restrained use of sulfur underscore its natural-wine character.

Food & Serving
This is a highly versatile food wine that pairs beautifully with charcuterie, grilled vegetables, mezze, and Mediterranean dishes. It works particularly well with lightly spiced cuisine, such as Middle Eastern plates, Korean BBQ, or tapas, as well as richer seafood like tuna, salmon, or octopus. Try it alongside roast chicken, pork with herbs, or hearty salads featuring beetroot, lentils, or goat cheese. Serve slightly chilled, around 10–12 °C (50–54 °F), to balance freshness and aromatic complexity. A brief decant of 15–30 minutes, or simply opening the bottle a bit early, helps the wine open up and smooth out any initial reduction, revealing its full, layered personality.
