Johannes Zillinger Parcellaire Blanc & Sauvignon Bio 2022 is a characterful, biodynamic white blend from Austria’s Weinviertel, crafted from Sauvignon Blanc and Pinot Blanc (Weißburgunder). It brings together two distinct, individually vinified components into one seamless, bone-dry and highly aromatic wine. The Parcellaire series showcases Zillinger’s parcel-specific, low-intervention philosophy, highlighting the purity of fruit and the unique expression of his vineyards.

Tasting Notes
In the glass, this wine shows a pale to medium straw-yellow hue with a subtle greenish shimmer, reflecting its freshness and youth. The nose opens with delicate citrus notes—think lemon zest and grapefruit—interwoven with elderflower and white blossom, followed by nuances of fresh meadow herbs and a cool, stony minerality. On the palate, the wine is completely dry, juicy, and precise, with a lively, mouthwatering acidity that gives it real energy and drive. Sauvignon Blanc contributes aromatic lift, citrus brightness and herbal clarity, while Pinot Blanc adds texture, quiet depth and a gentle creaminess from time on the lees. The finish is cool, mineral and slightly saline, with plenty of tension and length. Enjoyable in its youth for its vibrancy, it also has the structure and acidity to evolve positively over the next 3–5 years, gaining complexity and a more pronounced savory, herbal profile.

Production
The grapes for Parcellaire Blanc & Sauvignon Bio 2022 come from organically and biodynamically farmed vineyards in Austria’s Weinviertel, a region known for its cool climate, loess and limestone-influenced soils, and brisk winds that preserve acidity and aromatic intensity. Pinot Blanc undergoes spontaneous whole-bunch fermentation in amphora, then continues fermenting in large 1,000-liter wooden casks before spending additional time on full lees to build texture and complexity. The Sauvignon Blanc is whole-bunch pressed and left for ten months on the full lees in 500-liter barrels, bringing aromatic definition and structure. The two components are kept separate throughout maturation and only blended shortly before bottling, without heavy manipulation, to preserve the authentic character of each variety and the terroir.

Food & Serving
This wine is a natural match for fresh, summery dishes—think Caprese salad with ripe tomatoes, basil and high-quality olive oil, especially when topped with creamy burrata or buffalo mozzarella. It also pairs beautifully with light goat cheese, grilled vegetables, herb-driven cuisine, and delicate fish or seafood dishes featuring citrus and fresh herbs. Serve well chilled, around 8–10°C (46–50°F), to emphasize its freshness and mineral edge. A brief decant of 15–20 minutes or simply giving it some time in the glass can help the aromatics unfurl and bring out the interplay between the Sauvignon’s lift and the Pinot Blanc’s subtle depth.
