Fruit is harvested at optimal ripeness, then carefully sorted to ensure only healthy, fully ripe mirabelles make it into the fermenter. After a controlled fermentation of the crushed fruit to capture maximum aroma, the mash is distilled in traditional copper stills, typically in slow, gentle runs to preserve the delicate fruit profile. The heart cut is separated with precision, then rested in neutral vessels to harmonize before bottling without any flavoring, coloring or sweetening, keeping the spirit authentically fruit-driven.
