Tasting Notes
In the glass, the 2018 Partition 7 Parcelles shows a luminous, pale straw color with fine, persistent bubbles that form an elegant mousse. The nose opens with notes of citrus zest, crisp green apple, and white peach, layered with chalky minerality, blossom, and subtle brioche. With air, more complex undertones of hazelnut, fresh cream, and a touch of spice begin to emerge.
On the palate, this Extra Brut is taut yet generous, balancing ripe orchard and stone fruits with a firm, saline backbone. Flavors of lemon curd, pear, and Mirabelle plum are framed by hints of toasted almond, pastry, and delicate white flowers. Partition 7 Parcelles is sourced from seven carefully chosen plots in the heart of the Champagne region, with vines rooted in predominantly chalk and limestone-rich soils that confer tension, salinity, and finesse. The 2018 harvest was picked by hand to preserve berry integrity and to allow rigorous selection in the vineyard. In the cellar, J-M Sélèque favors gentle pressing, spontaneous fermentations, and a measured use of oak to add texture without overshadowing terroir. The three grape varieties—Chardonnay, Pinot Meunier, and Pinot Noir—are vinified separately in small vessels, then blended to create a balanced, layered wine. Extended lees aging in bottle refines the mousse and deepens complexity before disgorgement with a very low Extra Brut dosage to highlight the natural purity of the fruit and the parcels’ distinct character.

This Champagne is a superb partner for refined, delicate dishes where freshness and texture are key. Think oysters, scallops crudo, tuna tartare, or sushi, as well as simply grilled white fish, butter-poached lobster, and poultry with light cream sauces.
