Crafted in small quantities in the heart of the Champagne region, it offers a refined, terroir-driven expression with a drier Extra Brut dosage that highlights purity and precision. This cuvée reflects the new wave of artisan Champagne growers, where careful vineyard work and low-intervention winemaking take center stage.

Tasting Notes
In the glass, La Pouillotte shows a bright, pale straw color with fine, persistent bubbles forming an elegant mousse. On the nose, it opens with notes of crisp orchard fruits—green apple and pear—layered with citrus zest, white flowers, and hints of brioche and almond, suggesting time on lees. The palate is dry and focused, in keeping with its Extra Brut style, yet it remains generous in texture. Lively acidity frames flavors of apple, lemon, and ripe stone fruit, with subtle pastry, hazelnut and chalky minerality providing depth and length. The Pinot Meunier brings flesh and gentle spice, while the Chardonnay adds tension and finesse. This non-vintage Champagne is ready to drink now for its energy and freshness, but it will reward short-term cellaring over the next 3–5 years as the layers continue to knit together.

Production
La Pouillotte is sourced from carefully tended vineyards in the Champagne region of France, where cool climate and chalk- and limestone-rich soils deliver both vibrancy and mineral finesse. Grapes are typically harvested by hand at optimal ripeness to preserve delicate aromatics and ensure rigorous selection in the vineyard. In the cellar, Jérôme Blin favors a traditional Champagne vinification, fermenting the base wines in stainless steel or neutral vessels to protect freshness, followed by secondary fermentation in bottle. Extended aging on the lees builds texture, complexity, and the fine bead of bubbles, with a low Extra Brut dosage added at disgorgement to keep the wine taut, pure, and expressive of its origin.

Food & Serving
This Extra Brut Champagne is a natural partner for refined, savory dishes where freshness and structure are key. Try it with oysters, scallop crudo, ceviche, or simply prepared white fish, as well as sushi and sashimi. It also pairs beautifully with soft cheeses, gougères, light poultry dishes, or charcuterie plates where its acidity cuts through richness. Serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or an elegant, narrow-bowled white wine glass will allow the aromas to open; decanting is generally not necessary for this style.
