Jérôme Blin Champagne Cuvée Octave Chardonnay Zero Dosage is a pure, racy expression of Chardonnay from the heart of Champagne. Tasting Notes
In the glass, Cuvée Octave shines with a pale straw to light golden hue, highlighted by fine, persistent bubbles that form an elegant, delicate mousse. The nose is precise and lifted, with notes of green apple, lemon zest and white flowers, layered over chalky minerality and a hint of brioche or almond from lees ageing.
On the palate, this is taut, linear and very pure, showcasing the natural tension of Chardonnay and the clarity of a zero-dosage style. Expect bright citrus—grapefruit, lemon and yuzu—alongside crisp pear and subtle stone fruit, all framed by a saline, chalk-inflected backbone. The finish is long, dry and mouthwatering, with a lingering impression of citrus peel, crushed stone and a light nuttiness. While already highly enjoyable for its energy and precision, this Champagne has the structure and acidity to evolve gracefully over the next 3–6 years, gaining additional complexity and creaminess with time in bottle.
Production
Sourced from carefully tended Chardonnay parcels in the Champagne region of France, Jérôme Blin’s Cuvée Octave is rooted in chalk and limestone soils that are quintessential to Champagne’s identity. These cool, mineral-rich sites help the grapes retain remarkable freshness and precision. Harvesting is typically done by hand, allowing for meticulous selection of only the healthiest, ripest bunches—a crucial step when producing a zero-dosage wine, where nothing can mask imperfections. After gentle pressing and primary fermentation, the base wines are aged on their lees to build texture and complexity, then carefully blended and bottled for secondary fermentation following the traditional méthode champenoise. Extended ageing on the lees in bottle contributes finesse, fine bubbles and subtle brioche notes, before disgorgement with no dosage added, preserving the wine’s natural dryness and terroir expression.
Food & Serving
This zero-dosage Blanc de Blancs is a superb partner for pristine, delicately flavored dishes where freshness and texture take center stage. Serve it with oysters, sashimi, ceviche, scallop crudo, or simple grilled white fish with lemon and herbs. It also shines alongside goat cheese, fresh chèvre tart, sushi, tempura, or light vegetable dishes such as asparagus, fennel or artichokes. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its bright acidity and fine bead. A brief 10–15 minutes in the glass or a quick splash into a chilled decanter can help the aromas open up, but extended decanting is not necessary—this Champagne is all about precision and immediacy.
