Tasting Notes
In the glass, Where Dreams 2022 shows a bright, luminous straw-yellow color with delicate golden highlights that hint at both concentration and refinement. The nose is complex and layered: ripe orchard fruits such as pear and yellow apple mingle with juicy white peach, Meyer lemon and hints of tropical pineapple, wrapped in notes of acacia blossom, vanilla bean, toasted hazelnut and a subtle buttery nuance from refined oak aging.
On the palate, the wine is full-bodied yet remarkably poised, with a creamy, satin texture supported by vibrant, saline-edged acidity. Flavors of ripe stone fruit, citrus curd and baked apple are underscored by fine spice, brioche, and a gentle mineral streak that brings lift and length. The finish is long, clean and persistent, leaving impressions of citrus zest, lightly toasted nuts and delicate floral notes. In magnum format, this 2022 has excellent aging potential: it can be enjoyed now for its youthful energy but will evolve beautifully over 8–12 years, gaining further complexity, honeyed tones and even more integration of fruit and oak.
Production
Where Dreams is sourced from carefully selected Chardonnay parcels in Friuli-Venezia Giulia, a region renowned for its cool nights, sunny days and mineral-rich soils that naturally favor high-quality white wines. The vineyards benefit from a unique meeting of Alpine breezes and Adriatic influences, helping to preserve aromatics and freshness while achieving perfect ripeness. Grapes are typically harvested by hand at optimal maturity, allowing meticulous selection of only the healthiest, most expressive fruit. In the cellar, Jermann employs a mix of stainless steel and oak to highlight both purity and complexity: the must is gently pressed, fermented under controlled temperatures, and a portion of the wine is aged in small French oak barrels on fine lees, with regular bâtonnage to build texture, depth and aromatic nuance, before final blending and bottling.
Food & Serving
This is a versatile gastronomic white that shines with refined dishes. It pairs beautifully with butter-poached lobster, seared scallops, rich seafood risottos, roasted turbot or halibut, and delicately sauced white meats such as veal or roast chicken with herbs. Creamy pastas, truffle-inflected dishes and aged cow’s milk cheeses also find a superb match in its generous yet fresh profile. For optimal enjoyment, serve at 10–12°C (50–54°F); pouring slightly cooler and allowing the wine to warm gently in the glass will reveal its full aromatic spectrum. While decanting is not strictly necessary for a young white, a short 20–30 minutes in a carafe can help this magnum open up and express its layered complexity.
