Tasting Notes
In the glass, the 2012 Where Dreams shows a luminous, deep straw-yellow color with subtle golden highlights, hinting at both concentration and evolution. The nose is complex and layered, opening with ripe orchard fruits—yellow apple, pear, and white peach—interwoven with notes of lemon curd, acacia blossom, and hints of tropical fruit. As it evolves in the glass, you’ll pick up nuances of vanilla, toasted hazelnut, fresh brioche, and a delicate minerality.
On the palate, this is a full-bodied yet finely poised Chardonnay, with a creamy, almost silky texture balanced by a vibrant, saline acidity typical of Friuli’s terroir. Flavors of ripe stone fruit, baked apple, and citrus cream are wrapped in well-integrated oak tones—subtle toast, sweet spice, and almond. Production
The grapes for Jermann Where Dreams 2012 come from select vineyards in Friuli-Venezia Giulia, where stony, well-drained soils and cool Alpine and Adriatic influences create ideal conditions for refined, aromatic Chardonnay. Yields are kept low and harvesting is carried out by hand to ensure only perfectly ripe, healthy bunches make it to the cellar. After gentle pressing, the must is typically fermented in barriques, allowing for controlled oak integration and complexity. Extended maturation on the lees, with periodic bâtonnage, adds texture, depth, and nuance, resulting in a Chardonnay that combines richness with tension and a clear expression of its Friulian origin.
Food & Serving
This 2012 Chardonnay pairs beautifully with refined seafood dishes such as seared scallops, lobster with drawn butter, or roasted turbot, as well as rich poultry preparations like roast chicken, guinea fowl, or veal in creamy sauces. It also works wonderfully with truffle risotto, aged cow’s milk cheeses, and delicately spiced white meat dishes. For optimal enjoyment, serve at 10–12°C (50–54°F). Decanting for 30–45 minutes before serving will help the wine fully open its aromatic spectrum, especially at this stage of evolution.
