Jermann Capo Martino In Rotars 2021 is one of Friuli’s benchmark white wines, a rich, characterful blend that showcases the very best of the Collio hills. Named after the Capo Martino hill purchased in 1991, this cuvée is crafted from historic local varieties planted on a single 7.5-hectare vineyard. The result is a refined, textural white that marries Friulian tradition with Jermann’s meticulous, modern winemaking.
Tasting Notes
In the glass, Capo Martino 2021 typically shows a deep straw to light golden hue, reflecting both ripe fruit and careful maturation. The nose is complex and layered: expect notes of ripe stone fruit, yellow plum and baked apple, alongside wild herbs, acacia blossom, chamomile, honey and a subtle almond nuance. Gentle hints of spice and mineral tones speak clearly of its hillside origin.
On the palate, this is a full-bodied, structured white with impressive depth and balance. The Friulano/Sauvignon Vert brings savory, nutty and herbal notes, while Picolit adds richness and almost honeyed complexity, and Ribolla contributes freshness and tension. Flavors of peach, pear, citrus zest and dried flowers are wrapped in a creamy, almost waxy texture, lifted by vibrant acidity and a distinct mineral backbone. The finish is long, elegant and slightly saline, with lingering floral and nutty notes. Capo Martino is built to age: in a good cellar, the 2021 vintage should develop beautifully over 8–12 years, gaining more honeyed, truffled and tertiary nuances.
Production
Capo Martino comes from a single, terraced vineyard in the heart of the Gorizia hill area of Friuli-Venezia Giulia, overlooking a patchwork of slopes influenced by both Alpine breezes and Adriatic currents. The soils are classic ‘ponca’ – stratified marl and sandstone – which naturally limit yields and give the wine its notable minerality and structure. The vineyard, restored between 1996 and 2003, is planted to traditional local varieties, harvested by hand with strict selection in the vineyard. Grapes are picked at optimal ripeness, often slightly later to build concentration and complexity. In the cellar, the different varieties are vinified with great care, typically involving gentle pressing, temperature-controlled fermentation and a period of maturation on the fine lees, partly in wood and partly in stainless steel, to enhance texture and aromatic depth while preserving freshness. The final blend is crafted to express both the character of Capo Martino hill and the traditional friulano field-blend style.
Food & Serving
Capo Martino 2021 is a gastronomic white, ideal for refined dishes where depth and structure are key. It pairs beautifully with rich seafood such as lobster, scallops, monkfish, and turbot, especially when served with butter, herbs or delicate cream sauces. It is also excellent with risotti (particularly with porcini mushrooms or seafood), roasted poultry, veal in light jus, and complex vegetable dishes featuring pumpkin, fennel or truffle. Mature semi-hard cheeses and aged mountain cheeses are also superb companions. Serve at 10–12°C (50–54°F) to let the aromatics open without losing freshness; for maximum expression, especially once the wine has a few years of bottle age, decanting for 30–45 minutes is recommended.
