Jean Paul & Benoit Droin Chablis 2024 is a bright, mineral-driven Chardonnay from one of Chablis’ most respected family producers. Tasting Notes
In the glass, this Chablis typically shows a pale straw colour with green reflections, signaling freshness and clarity. The nose is clean and lifted, with aromas of citrus zest, green apple, pear, and subtle white flowers, all carried by a distinct flinty, saline edge. On the palate, it is crisp and focused, with lively acidity, taut orchard fruit, and a stony mineral finish that gives the wine its signature Chablis identity. Youthful and precise in its early years, it can also gain extra complexity with short to medium-term cellaring, developing more depth and subtle honeyed nuances over time.

Production
Made from Chardonnay grown in the cool limestone and Kimmeridgian clay soils of Chablis, the wine reflects the region’s famous terroir of chalk, fossil-rich marl, and maritime-influenced freshness. Grapes are harvested with care to preserve natural acidity and aromatic purity, then vinified in a style that emphasizes clean fruit, structure, and mineral expression rather than overt oak influence.

Food & Serving
This is a classic match for oysters, shellfish, grilled white fish, sushi, goat cheese, and light poultry dishes. Serve well chilled, ideally around 8–10°C, and decanting is generally not necessary unless the wine is very young and you want to give it a little extra air in the glass.
