Jean-Paul & Benoît Droin Chablis 2023 is a classic expression of one of Burgundy’s most distinctive white-wine appellations. Made from Chardonnay and shaped by Chablis’ cool climate and famous fossil-rich soils, it offers a strikingly pure, mineral-driven style that speaks clearly of place.
Tasting Notes
Pale straw in the glass, this Chablis is bright, clean, and tightly focused. The nose opens with lemon, oyster shell, and a subtle flinty smokiness, while the palate is crisp and linear, balancing citrus freshness with stony salinity and a refined, dry finish.
In its first three years, the wine tends to be especially lively and generous, but with cellaring it develops greater depth and complexity. Over time, aromas of wet stone, forest floor, and a more layered mineral character emerge, and in the best vintages it can age gracefully for more than two decades.
Production
The vineyards of Chablis are planted on thin soils alternating between Kimmeridgian marl and limestone rich in fossilized oyster shells, which is central to the wine’s signature freshness and saline, mineral profile. In the cellar, the fruit is handled gently with pneumatic pressing, slow fermentation in stainless steel, and full malolactic conversion before resting for around 8 to 10 months, allowing the terroir to remain front and center.
Food & Serving
This is a natural choice for an apéritif, especially with small snacks or charcuterie, but it also pairs beautifully with simple starters such as fish terrine and fresh shellfish. Serve well chilled, ideally around 8–10°C, and decanting is not necessary.
