Jean-Paul & Benoît Droin’s Chablis 1er Cru Vaillons is a beautifully pure, classically styled Chardonnay that captures everything people love about great Chablis: bright mineral tension, elegant fruit, and effortless charm. Sourced from five carefully selected parcels, it reflects both the layered character of Premier Cru Vaillons and the estate’s long-standing expertise in crafting wines of precision and finesse.

Tasting Notes
The wine shows a luminous, pale straw color with the crystalline clarity expected from top Chablis. Aromatically, it opens with white flowers, a hint of iodine, and ripe, inviting fruit, all set against a subtle chalky-mineral backdrop. On the palate, it is fresh and finely structured, with a sleek core of minerality balanced by a light creamy texture from full malolactic fermentation and élevage in steel and oak. Over time, the wine develops more complex notes of menthol, oyster shell, and a deeper saline edge, and it has the balance to age gracefully for several years, gaining additional depth and nuance.

Production
Vaillons sits on Kimmeridgian limestone rich in fossilized oyster shells, one of Chablis’ defining terroirs, while the clay topsoils add a touch of breadth and roundness to the wine’s naturally taut profile. The site’s sunny exposure and sheltered position help the wine open early while preserving the region’s signature freshness. Harvested from five selected parcels, the grapes undergo gentle pneumatic pressing before a slow fermentation in both stainless steel and oak. Full malolactic fermentation softens the texture, and the wine then matures for 8 to 10 months to integrate its mineral line with a subtle creamy polish.

Food & Serving
This is an excellent match for simple seafood dishes such as cod with lemon, steamed mussels, or freshly peeled shrimp. Serve chilled, ideally around 10–12°C, and decanting is not necessary unless the wine is being enjoyed very young and you want to give it a little extra air.
