Jean-Paul & Benoît Droin’s Chablis 1er Cru Montmains 2023 is a beautifully generous expression of Chardonnay, combining Premier Cru precision with a richer, more rounded style than many expect from Chablis. Drawn from one of Montmains’ more clay-rich sites, it offers the classic Chablis mineral frame with an added layer of fruit and charm.

Tasting Notes
Pale gold in the glass, the wine opens with aromas of yellow stone fruit, apricot, and subtle notes of toasted almond and hazelnut. On the palate it is deep, broad, and juicy, with a gentle spicy warmth and a hint of toast that adds depth without overwhelming the fruit. A full malolactic fermentation gives the wine a silky, creamy texture, while its natural freshness keeps the profile lifted and balanced. With a few years in bottle, it is expected to develop toward brioche, greater complexity, and a more layered, harmonious finish.

Production
Montmains is known for its clay-influenced soils, which tend to produce a more supple and generous Chablis character. The grapes are gently pneumatic-pressed, then fermented slowly in a combination of stainless steel and oak, allowing the wine to retain purity while gaining texture and nuance.

Food & Serving
This is an excellent match for roast chicken, butter-poached or pan-fried fish, and herb omelets. Serve chilled at around 10–12°C; decanting is not necessary, though a little time in the glass can help the aromas unfold.
