Jean Louis Vergnon Champagne Blanc de Blancs Conversation Brut Grand Cru is a refined, Chardonnay-driven Champagne crafted from some of the finest chalk-rich vineyards in the region. This cuvée showcases the precision, tension, and elegance that have made Côte des Blancs Grand Cru villages legendary among Champagne lovers. ‘Conversation’ lives up to its name: it’s a Champagne meant to be shared, pondered, and enjoyed from the first aperitif to the final toast.
Tasting Notes
In the glass, this Blanc de Blancs shows a luminous, pale gold hue with a fine, persistent bead that speaks to both quality and careful aging on the lees. The nose is pure and expressive, opening with notes of lemon zest, green apple, and white flowers, followed by more complex hints of chalk, brioche, almond, and a touch of salty sea breeze.
On the palate, the wine is incisive yet creamy, with a bright, linear acidity wrapped in a silky mousse. Flavors of citrus, crisp pear, and orchard fruit are layered with pastry cream, toasted hazelnut, and wet stone, giving both immediate pleasure and considerable depth. The finish is long, precise, and delicately saline, inviting another sip. As a non-vintage Grand Cru Blanc de Blancs built on high-quality base wines, it drinks beautifully on release but can comfortably develop further complexity over 3–7 years in a good cellar, gaining more brioche, nutty and honeyed nuances with time.
Production
The grapes for Conversation Brut Grand Cru come primarily from Grand Cru villages in the Côte des Blancs, where pure chalk subsoils and cool, northerly exposure deliver tension, minerality, and finesse to Chardonnay. Vineyards are tended with careful canopy management and strict yield control to ensure concentration and balance, and harvest is conducted by hand to protect the integrity of the fruit and allow precise parcel selection. In the cellar, the must is gently pressed, then vinified in stainless steel (and in some vintages, partly in oak) to preserve freshness and purity of fruit. After the base wines are blended, the cuvée undergoes a second fermentation in bottle and ages extendedly on its lees, building texture and complexity before disgorgement and a carefully judged Brut dosage that highlights, rather than masks, the natural character of the Grand Cru fruit.
Food & Serving
This Champagne is a natural partner for refined, ingredient-driven cuisine. It shines with oysters, scallop carpaccio, sashimi, and other delicate seafood, and pairs beautifully with lobster, grilled prawns, or turbot with beurre blanc. On land, try it with poultry terrine, light veal dishes, or creamy cheeses such as a young Comté or Brie de Meaux. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to let the aromatics fully express themselves. A quick 10–15 minutes in the glass or in a decanter designed for sparkling wine can help the wine open up, especially if served soon after being taken from a cold fridge.
