Grapes are typically harvested by hand to allow careful selection of perfectly ripe bunches in the vineyard. In the cellar, fermentation takes place in temperature-controlled vats, often with a portion of whole clusters to enhance aromatic lift and structural tension. Gentle extraction preserves the delicacy of Pinot Nero, while aging in French oak barrels—only a proportion of which are new—adds polish and subtle spice without overpowering the fruit or the expression of site.
